I have had a very productive day today - a beautiful sunny September day. We have had loads of tomatoes in our poly-tunnel and Laura picked containers of them for me. Looking at the mountain of tomatoes in my fridge I realised I would have to do something with them. Found one of my favourite recipe book - Jams & Chutneys by Thane Prince. Decided to make Tomato Chutney with onions,apples,ginger & chillies.
While that was cooking I went into the garden and picked some lovely Autumn raspberries which I made into jam. On way to garden had seen blackberries, so back to the house to get another container. I took Millie (spaniel) with me as she loves picking blackberries - picks low ones with her mouth. As there are tons more blackberries to come which I will freeze for pies/crumbles , I decided to make Blackberry Vodka with these ( recipe from Jams& Chutneys book - Thane Prince)
Blackberry Vodka recipe
450g blackberries 225g white granulated sugar 600ml vodka
Put blackberries and sugar in a saucepan and heat gently,until juices begin to run and sugar has dissolved
Transfer the mixture to a glass bowl or jug( I use La Parfait kilner jars) and pour over the vodka. Stir, then cover.
Stir daily for 4-5 days , then strain into bottles and store in a cupboard, dark larder of freezer. Taste after about 8 weeks, adding more sugar if necessary. Ready to drink after 3 months but best left for about 1 year.
Have made this before with raspberries. Can be made with gin but I prefer the vodka as it lets the fruit flavours shine through. Enjoy !
To finish my culinary day I made a chicken, bacon and leek pie for the family's supper . Even they were impressed ! Am going to have to sit down with a glass of wine now...
And there are still loads of tomatoes in my fridge waiting ....they will have to wait until tomorrow.
